【Abstract】 Superoxide dismutase(SOD) is an important enzyme which is widely existing in the animals,plants and microorganisms.SOD has important physiological function,for example,to enhance the catalytic disproportionation reaction of the ultra oxygen anoin,and to effectively remove superoxide free radical in organism.In this paper,the extraction and purification of SOD from animal blood is mainly summarized.The development of SOD’s application research in food and the current problems is also dicussed.更多还原
