紫花地丁紫色素的提取及其性能研究
Extraction and Characteristics of Purple Pigment from Viola yedoensis
【摘要】 本文以紫花地丁为原料,系统考察了不同提取方法对紫花地丁紫色素提取效果的影响。结果表明:在pH=5盐酸溶液中,料液比为1:250(g/mL),室温下提取1h,有较好提取效果,提取效率可达13.68%。该色素为水溶性色素,最大吸收波长为550nm。光照、溶液pH值、色素抗氧化还原性以及食品添加剂、金属离子对它的影响也分别进行了研究。实验表明:色素有较低氧化还原耐受性,对光不敏感。与一些常见食品添加剂,如葡萄糖、苯甲酸钠、食盐以及金属离子Ca2+和Mg2+相比较,维生素C和金属离子Fe3+、Cu2+、La2+,Nd3+,Er2+对色素稳定性有较大影响。在提取、干燥、转储过程中,应尽量避免与Vc以及铁制铜制容器长时间接触。
【Abstract】 The effects of different extraction methods on the extraction efficiency of purple pigment from Viola yedoensis were studied in this paper.The results showed high yield of purple pigment (13.68%) could be extracted using HCl solution at pH =5 with material-to-solvent ratio of 1:250 for 1 h.The pigment was water soluble with the maximum absorption wavelength at 550 nm.It was also found that the the pigment was not sensitive to light while had low tolerance to oxidation and reduction.Mental ions (Fe3+,Cu2+,La2+,Nd3+,and Er2+) and Vc had great effect on the stability of the pigment.Therefore,in the extracting,drying and storing processes,it should be avoided to directly contact with Vitamin C and the vessel of iron or copper for a long time.
