高压直流电场对豆腐干燥的实验研究及机理分析
Experimental Study and Mechanism Analysis of High Voltage Direct Current Electric Field Drying Tofu
【摘要】 为了探索高压电场干燥机理,优化干燥工艺,提高干燥效率,通过采用针电极、线电极和板电极在不同的电压下对豆腐进行了干燥速度对比实验,同时进行了针电极下豆腐加玻璃罩与不加罩的干燥速度对比实验和线电极下电极间距、线间距对干燥速度的影响实验及豆腐的高压电场预处理实验。实验结果表明:采用板电极干燥效果不明显,而采用线电极和针电极能获得较大的干燥速度,加玻璃罩后豆腐的干燥速度远低于未加罩豆腐,上下电极间距和线间距也都对干燥速度有一定影响,高压电场预处理并不能提高豆腐的干燥速度,最后分析了高压电场干燥机理,认为离子风对被干燥物料的冲击作用是导致其干燥速度增加的主要原因。
【Abstract】 In order to explore the drying mechanism and improve the drying efficiency of high voltage electric field,the drying rate of tofu using a needle electrode,a wire electrode and a plate electrode under different voltages was comparatively studied,respectively.At the same time,the drying rate of tofu using needle electrode with glass enclosure and counterpart without it and the effect of the wire’s electrode spacing and the distance between the two neighboring wires on drying rate were comparatively investigated.The results indicate that high voltage electric field formed by a plate electrode that cannot improve the drying rate obviously,while a needle electrode and a wire electrode can improve the drying rate significantly,the drying rate of tofu with plus glass enclosures is much lower than that without glass enclosures,and the electrode spacing and the distance between the two neighboring wires can affect the drying rate,the high electric field pretreatment fails to improve the drying rate of the tofu.At last,the drying mechanism was analyzed.The impact of ion wind on the drying material played a major role in increasing the drying rate.
