工厂化养殖丁鱥肌肉营养成分分析

【摘要】 [目的]分析工厂化养殖丁鱥肌肉营养成分。[方法]以18尾平均体重82.8g,平均体长15.84cm丁鱥为试验对象,采用常规分析方法和氨基酸测定方法,测定肌肉中粗蛋白质、粗脂肪、粗灰分、水分及氨基酸含量。[结果]丁鱥肌肉鲜样中粗蛋白、粗脂肪、粗灰分、水分、无氮浸出物含量分别为17.44%、1.94%、1.16%、79.31%和0.15%。18种氨基酸总含量为12.64g(鲜样),其中必需氨基酸总含量为5.30g,占氨基酸总量的41.93%。丁鱥肌肉所含人体必需氨基酸占氨基酸总量的百分比高于WHO/FAO提出的标准。必需氨基酸指数为73.94;谷氨酸、天冬氨酸、丙氨酸和甘氨酸4种风味氨基酸总含量为4.61g,占氨基酸总量的36.47%。[结论]从常规营养成分和必需氨基酸比例上看,工厂化养殖条件下的丁鱥具有较好的营养品质。

【Abstract】 [Objective] The nutrition component in the muscle of tench under industrial culture was analyzed.[Method] 18 tenches with average weight and length of 82.8 g and 15.84 cm being taken as testing subjects,in the content of crude protein,crude fat,crude ash,water and amino acid in muscle was determined with the method of conventional analysis and amino acid-testing.[Results] The content of crude protein,crude fat,crude ash,water and extract without nitrogen in the fresh muscle of tench was 17.44%,1.94%,1.16%,79.31% and 0.15%.Total content of 18 kinds of amino acids was 12.64 g(in fresh sample),in which,total content of essential amino acid was 5.30 g with 41.93% of total amino acid.The content of essential amino acid in the tench muscle was higher than that in the standard proposed by WHO/FAO.The essential amino acid index was 73.94 and total content of 4 kinds of amino acids:glutamic acid,aspartic acid,alanine and glycine,was 4.61 g with 36.47% of total amino acid.[Conclusion] From the viewpoint of the ratio of conventional nutrient to essential amino acid,the nutritional quality of Tench under the condition of factory farming was better.
