分离蛋白乳清中异黄酮糖苷酸解工艺的研究
STUDY ON ACID HYDROLYSIS OF ISOFLAVONE GLYCOSIDES IN SPI MILK SERUM
【摘要】 水解分离蛋白乳清,高效液相色谱测定异黄酮苷元转化率.通过单因素试验和正交试验确定水解的最佳条件为:硫酸浓度为2.5 mol/L,水解时间为2 h,水解温度为80℃时,大豆异黄酮苷元最高转化率为98.7%.并以1HNRR、ESI/MS确定了主要黄酮苷元结构.
【Abstract】 The SPI milk serum was hydrolyzed,and HPLC was used for determining the conversion rate of isoflavone aglycons.Through single-factor tests and orthogonal test,the optimal hydrolysis conditions were determined as follows: concentration of sulfuric acid 2.5 mol/L,hydrolysis time 2 h and hydrolysis temperature 80 ℃.Results show that the highest conversion rate of isoflavone aglycones is 98.7%.The structures of main flavonoid aglycones were determined by 1HNRR and ESI/MS.
