菠萝多糖提取工艺及其抗羟自由基能力的研究

【Abstract】 Hot water extraction technology for crude polysaccharide in pineapple peel and pineapple polysaccharide’s ability to scavenge hydroxyl radicals were studied. Effects of different factors such as solid-liquid ratio, temperature and time on the yield of polysaccharide were measured. Results showed that the factors influencing extraction efficiency were as follows: temperature > time > solid-liquid ratio.and the optimal conditions for the water extraction technology were 100 ℃, 3 hours and 1∶20 solid-liquid ratio. The yield of polysaccharide reached 5.2% under the optimal condition. When the concentration of crude pineapple polysaccharide was 12 mg/ml, the eliminating rate was up to 90%. Research showed that crude pineapple polysaccharide has the ability to eliminating hydroxyl radicals and the scavenging rate was up to 90% at the concentration of 12 mg/ml.
