蜂王浆酶解工艺及其产物吸湿保湿性能的研究
Studies on the Enzymatic Hydrolysis Technology of Royal Jelly and the Moisture Absorption and Retention Capacity of Its Hydrolysates
【摘要】 目的:探明不同条件下蜂王浆酶解产物的吸湿和保湿性能。方法:利用胰蛋白酶对蜂王浆进行酶解,以鲜蜂王浆和骨胶原为对照,在20℃、相对湿度分别为81%和43%的条件下测定酶解产物的吸湿和保湿性能。结果:在底物质量分数7.5%、酶与底物含量比1.25%、酶解时间4h、pH8的酶解条件下,产物的吸湿和保湿性均高于蜂王浆,且明显优于骨胶原。结论:酶解可提高蜂王浆的吸湿和保湿性,优化酶解工艺能进一步提高产物的这些特性。酶解产物与蜂王浆相比,具有吸湿和保湿性强、相对分子质量小、溶解性好等优点,因此极具开发潜力。
【Abstract】 Objective: To determine the moisture absorption and retention capacity of enzymatic hydrolysates from royal jelly under different conditions. Methods: In comparison with royal jelly and bone collagen, the moisture absorption and retention capacity of enzymatic hydrolysates from royal jelly were determined under conditions of 20 ℃, 81% and 43% relative humidities. Results: The enzymatic hydrolysates showed better performance both in moisture absorption and retention test than royal jelly and bone collagen did. The optimum conditions were as follows: substrate concentration 7.5%; enzyme concentration 1.25%; temperature 50 ℃; time of hydrolysis 4 h and pH 8. Conclusion: Enzymatic hydrolysis can raise the moisture absorption and retention capacity of royal jelly. Moreover, both sides might be improved by modifying the process conditions of enzymatic hydrolysis. So enzymatic hydrolysis would be an efficient method for obtaining ingredients from royal jelly with good moisture absorption and retention capacity, resolvability and low relative molecular weight.
