海豹油阳离子脂肪乳的制备与稳定性研究

【摘要】 目的以富含n-3不饱和脂肪酸的海豹油为油相,研究非离子表面活性剂对制备的阳离子脂肪乳物理稳定性的影响。方法以磁力搅拌、高压乳匀得粒径均一的样品,间隔不同时间取样,测定粒径、Zeta电位及pH值。结果TMS质量分数在0.10%~0.50%范围内,对脂肪乳的Zeta电位、粒径及稳定性产生较大影响,乳液的pH变化与乳液的Zeta电位和粒径变化相关。结论作为油相的脂肪不断水解释放脂肪酸,脂肪酸电离产生脂肪酸根(RCOO-)影响海豹油阳离子脂肪乳的物理稳定性。

【Abstract】 Objective The effect of nonionic wetting agents on the stability of the cation fat milk was examined,by using n-3 unsaturated fatty acid enriched seal oil as oil phase. Methods The samples with homogeneous particle were prepared by magnetic mixing and high pressure emulsifying.The grain diameter,Zeta electric potential and pH were tested at different time interval. Results TMS at 0.10%~0.50% had great effects on Zeta electric potential,grain diameter and stability.It was found that the changes of the zeta potential and the size of emulsions were related to decreased pH of emulsions. Conclusion Unceasingly hydrolysis of fat to free fatty acids then ionizing R-COO-influences the stability of sea oil cation fat milk.
