2006-2008南京市食品污染物污染状况分析
Food Contamination Status of Nanjing City in 2006-2008
【摘要】 目的了解南京市2006-2008年9类食品的污染状况,建立"南京市食品污染物监测体系"。方法生肉、水产品、生食蔬菜、熟肉制品、蔬菜色拉、速冻米面制品(生、熟)、非发酵豆制品、生奶与奶酪等9类食品,共计312份,按照GB/T4789-2003进行6种食源性致病菌(沙门菌、金黄色葡萄球菌、副溶血性弧菌、单核细胞增生李斯特菌、大肠埃希菌O157:H7和空肠弯曲菌)检测。菌株鉴定应用ATB细菌鉴定仪。结果单核细胞增生李斯特菌在2006-2008年总检出率分别为15.7%、15.7%和16.9%;沙门菌总检出率分别为4.3%、3.6%和2.2%;副溶血性弧菌总检出率分别为3.6%、1.2%和2.2%;金黄色葡萄球菌总检出率分别为1.4%、3.6%和0。而O157:H7大肠埃希菌和空肠弯曲菌未检出。结论2006-2008年单核细胞增生李斯特菌在6种致病菌中检出率最高达到15%以上,属高危致病菌;沙门菌、副溶血性弧菌、金黄色葡萄球菌检出率相对较低,但不排除它们在高危食品中引起食物中毒的潜在危险。因此对这4种致病菌污染的高危食品应引起足够重视,加强监控。
【Abstract】 Objective To understand contamination status of 9 kinds of foods in Nanjing from 2006 to 2008 and establish "Food Contaminants Monitoring System of Nanjing City".Methods According to GB/T4789-2003,nine kinds of food(such as meat products,aquatic products,vegetables,cooked meat products,vegetable salad,deep frozen rice products,nonfermented soybean products,raw milk and cheese),total 312 samples were collected.Six kinds of food-borne pathogens(Salmonella,Staphylococcus aureus,Vibro parahaemolyticus,Listeria monocytogenes(LM),Escherichia coli O157:H7 and Campylobacter jejuni)were detected.ATB was used to identify strains.Results The total postive rates of LM from 2006 to 2008 were 15.7%,15.7%,16.9%,separately.Salmonella were 4.3%,3.6%,2.2%,separately.Vibria parahaemolytieus were 3.6%,1.2%,2.2%.Staphylococcus aureus were 1.4%,3.6%,0%,seperately.While Escherichia coli O157:H7 and Campylobacter hadn’t been found.Conclusion Among six food-borne pathogens,LM was highly detected and reached above 15% from 2006 to 2008,while Salmonella,Vibro parahaemolyticus,Staphylococcus were detected with low positive rates.Potential risk factors of food poisoning in recent years can’t be eliminated and we should pay attention to them.
