闽南近海条纹斑竹鲨肌肉脂肪含量及脂肪酸组成分析
The Total Lipid and Fatty Acids in the Muscle of Chiloscyllium palgiosum(Bennett,1830),from Southern Fujian Coast Waters
【摘要】 用氯仿-甲醇法提取条纹斑竹鲨肌肉的粗脂肪,经甲酯化处理,用气相色谱法对其脂肪酸的组成进行分析.结果显示,闽南近海条纹斑竹鲨肌肉的含脂量为1.27%~5.22%,平均值为2.72%(鲜质量),属于低脂肪含量的鱼类.在该种鱼的肌肉中共检测到24种脂肪酸,其中饱和脂肪酸含量为(23.96±3.68)%,单不饱和脂肪酸含量为(16.04±2.27)%,多不饱和脂肪酸含量为(54.36±4.13)%,肌肉中脂肪酸以C16、C18、C22三系列脂肪酸为主,其中C22:6(DHA)含量最高,达到19.09%.研究结果表明,条纹斑竹鲨肌肉脂肪内含有高比例的不饱和脂肪酸,尤其是多不饱和脂肪酸,其肌肉有低脂肪、高蛋白,富含多不饱和脂肪酸的特点,具有很高的营养价值.
【Abstract】 The lipid content and fatty acid composition of muscle were determined in white-spotted bamboo shark(Chiloscyllium plagiosum) caught from Southern Fujian coast waters in Southeast of China.The sample muscles was extracted oil content by chloroform-methanol(2:1),esterified by HCl-methanol.The fatty acid methyl ester were analyzed on a gas chromatograph(Agilent 6890) equipped with a flame ionization detector(GC-FID).The total lipid content from the muscle of white-spottede bamboo shark was ranged from 1.27%~5.22% and total 24 fatty acids components were identified.In all samples,saturated fatty acids(SFAs) accounted for(23.96±3.68)% of the total fatty acid composition.The major fatty acid within this group was palmitic acid(C16:0),followed by stearic acid(C18:0).The monounsaturated fatty acids(MUFAs) accounted for(16.04±2.27)%.The major fatty acid in this group was oleic acid(C18:1).The content of polyunsaturated fatty acids(PUFAs) was(54.36±4.13)%.DHA(C22:6ω-3) was the major fatty acid,and followed by AA(C20:4ω-6).X-fa accounted for 5.77% of the total fatty acid composition.The white-spotted bamboo shark muscle contained high level of unsaturated fatty acids,in which PUFAs was the main component.Compared to the total ω-3 PUFAs(39.74%),the amount of ω-6 PUFAs was low and accounted for 14.78% of the total fatty acid in muscle.The ratio of ω-3/ω-6 was 2.78.One trait of C.palgiosum muscle lipid was a high percentage of unsaturated fatty acids,another is rich in physiologically active high polyunsaturated fatty acid.
