北京市丰台区公共餐饮业直接入口食品食源性致病菌污染状况调查

【摘要】 [目的]了解北京市丰台区直接入口食品中食源性致病菌的污染状况和污染水平。[方法]对丰台区11类餐饮业11种直接入口食品进行调查,检测方法按照GB/T4789-2003和WS/T9-1996进行。[结果]辖区内的83家餐饮业食品2148件调查中共检出124株(7.35%)变形杆菌、31株(1.84%)EPEC、2株(0.12%)单核细胞增生性李斯特菌、2株(0.80%)副溶血性弧菌、1株(0.05%)金黄色葡萄球菌。未检出沙门菌、志贺菌和EHECO157H7/NM;熟肉制品及凉拌菜中食源性致病菌检出率较高;大肠杆菌和变形杆菌检出率夏秋季高于冬季。[结论]直接入口食品中致病菌的污染比较严重,有针对性防范和控制各类食品致病菌的污染,是防止食源性疾病暴发的重要措施。

【Abstract】 [Objective] To investigate the situation and level of food-borne pathogens in food contamination in Fengtai.[Methods] 11 kinds of food samples were collected from 11 restaurants of Fengtai area from 2007.5-2008.5.Pathogen examination was made according to GB /T 4789-2003 and WS /T 9-1996.[Results] 124(7.35%) Proteus,31(1.84%) EPEC,2(0.12%) Listeria monocytogenes,2(0.80%) Vibro phrahaemolyticus and 1(0.05%) Staphylococcus aureus were isolated from the food samples.Salmonella,Shigella and EHEC O157H7 /NM were not isolated from all kinds of food samples.The positive rate of cooked meat was the highest and that of acetarious food was the second.The isolation rate of E.coli and Proteus in autumn was higher than that in winter and the highest was in August.[Conclusion] The contamination of food-borne pathogens in food is serious.Specific efforts towards prevention and control of food contamination are crucial to prevent food-borne illness.
