磁场处理对壳聚糖金属配合物抑制大肠杆菌作用的影响(英文)

【摘要】 壳聚糖(CS)是有丰富自然资源的甲壳素的脱乙酰基产物,壳聚糖及其衍生物具有优良的生物活性.文中报道了壳聚糖与铅、铜、铬等过渡金属离子所形成的壳聚糖金属配合物(CS-Cu、CS-Pb、CS-Cr)对大肠杆菌的抑制作用以及外加磁场处理对其抑菌作用的影响.采用琼脂扩散纸片法测定了各壳聚糖金属配合物对大肠杆菌的最低抑菌浓度,以此评了价壳聚糖金属配合物的抑菌能力.实验结果表明,各种壳聚糖金属配合物对大肠杆菌的抑制作用存在程度上的差异,以CS-Cr的抑菌效果最显著;外加磁场处理,能加强壳聚糖金属配合物对大肠杆菌的抑制作用,在场强为400 kA/m的磁场作用下,各种壳聚糖金属衍生物对大肠杆菌的最低抑菌浓度分别为CS-Cu:12.5 mg/mL,CS-Pb:6.25 mg/mL,CS-Cr:3.125 mg/mL.研究显示壳聚糖金属配合物在食品加工中有一定的应用前景.

【Abstract】 Chitosan(CS) is the product of deacetylation from chitin which has a enrich resource in nature.There are many excellent bioactivities and outstanding performances with chitosan and its derivates.The inhibitions of chitosan and the coordination complexes of chitosan with transition metal ions(CS-Cu、CS-Pb、CS-Cr) on Escherichia coli were reported,and the effects of extrinsic magnetic fields on the inhibitions were studied.The minimum inhibition concentrations of chitosan metal complexes were determined using the agar diffusion paper method to estimate the antibacterial activities of these complexes on E.coli.It could be seen from the results that there were some differences of inhibition on E.coli for different complexes in varying degrees.In which,the CS-Cr was the best.The inhibitions on Escherichia coli could be enhanced by the magnetic treatment of 400 kA/m.The minimum inhibitory concentrations of the chitosan metal complexes on E.coli were respectively as CS-Cu:12.5 mg/mL,CS-Pb:6.25 mg/mL,CS-Cr:3.125 mg/mL.It showed a bright applied foreground for the chitosan metal complexes in food processing.
