扇贝裙边胶原蛋白酶解物清除超氧阴离子能力的研究
Study on the Scavenging Effect of Scallop Skirt Collagen Hydrolysate on Superoxide Anion Radical
【摘要】 以扇贝裙边为原料,采用酶法提取胶原蛋白,并采用酶解技术制备扇贝裙边胶原蛋白酶解物,研究扇贝裙边胶原蛋白酶解液清除超氧阴离子的能力。结果表明:木瓜蛋白酶添加量为质量分数1.5%,酶解时间为90 min,酶解温度为60℃时,扇贝裙边胶原蛋白酶解物清除超氧阴离子的能力最好,为46.52%。
【Abstract】 In this study,the hydrolysate of collagen was firstly prepared from scallop skirt by enzymatic method and then the effect of collagen hydrolysate on the scavenging superoxide anion radical was explored.The results demonstrated that scallop skirt collagen hydrolysate exhibited a strong ability(46.52%) for scavenging superoxide anion radical when 1.5% papain enzyme was added at 60 ℃ for 90 min.
