深圳市水产品重金属污染状况调查

【摘要】 目的了解深圳市水产品重金属污染状况,为食品卫生安全监管提供依据。方法在深圳市餐饮单位、超级市场和肉菜综合市场采集水产品样品427份进行重金属检测。结果深圳市水产品重金属超标率为24.1%,海水贝类的超标率最高,达58.8%,重金属污染以镉为主,总超标率为19.0%,其中海水贝类中镉的超标率为53.9%,铅和无机砷在水产品中的超标率均小于5%。结论深圳市水产品中重金属主要污染为镉污染,主要集中在海水贝类。

【Abstract】 Objective To investigate the pollutant level of heavy metals in aquatic products,and to provide the evidence for food safety supervision in Shenzhen.Method The heavy metals were determined in 427 aquatic products collected from restaurants,supermarkets,and fairs in Shenzhen Results The over standard rate of heavy metals in aquatic products in Shenzhen was 24.1%;and that in sea water shellfish was the highest,reached 58.8%.The cadmium was the main heavy metal pollution in Shenzhen,with the total over standard rate of 19.0%;the exceeding standard rate of cadmium in sea water shellfish was 53.9%,and the exceeding standard rates of lead and inorganic arsenic in aquatic products were both less than 5%.Conclusions The cadmium is the main heavy metal pollution in Shenzhen,which mainly concentrates in sea water shellfish.
