沙棘果真空冷冻干燥工艺的研究

【摘要】 沙棘果在常温下运输或贮藏极不方便,短时间内就发酵变质。经真空冷冻干燥的沙棘果,既可以作为原料长期贮存,又可以直接复水食用。研究沙棘果真空冷冻干燥工艺,经多次实验,确定沙棘果的冻干曲线;通过对冻干后的沙棘果的黄酮含量的测定,确定最佳工艺过程。

【Abstract】 Hippophae Rhamnoides L. fruit is extremely inconvenient to transport or store under normal temperature, which will ferment and metamorphose in a short time. After vacuum freeze-drying, Hippophae Rhamnoides L. fruit not only can be used as raw material for long storage but also be directly rehydration edible. This article is about vacuum freeze -drying technological process of Hippophae Rhamnoides L. fruit. After several experiments, we determine the freezing -drying curve, through the determination of flavonoids content in Hippophae Rhamnoides L. fruit after freeze-drying we determin the best technological process.
