胰蛋白酶水解甲鱼蛋白参数的优化
Optimizing enzymatic hydrolysis conditions of trypsin in soft-shelled turtle protein
【摘要】 采用二次回归正交旋转组合设计对胰蛋白酶水解甲鱼蛋白的参数进行了优化,建立了甲鱼蛋白的水解度与酶用量、酶解温度、pH及酶解时间四个因素间的正交回归模型。从模型分析可知,酶用量13637·34U/kg、酶解温度50℃、pH7和反应时间8·94h为最佳酶解参数,甲鱼蛋白的最佳水解度可达14·36%。
【Abstract】 The enzymatic degradation conditions of trypsin in soft-shelled turtle protein were optimized by quadratic regression orthogonal rotary tests.The quadratic orthogonal regression model of degree of hydrolysis to four factors of the concentration of enzyme,temperature,pH value and time was established.The results showed that when the enzyme concentration,temperature,pH and time were 13637.34U/kg,50℃,7,and 8.94h respectively,the maximal degree of hydrolysis (Y)was 14.36%.
