平方根模型在亚硝酸盐抑菌预测中的探讨研究

【摘要】 为探讨平方根模型在拟合亚硝酸盐抑菌预测中的可行性,应用Baranyi模型对接种大肠杆菌、葡萄球菌和生孢梭菌后的蒸煮香肠在0~4℃冷藏温度下的生长曲线进行了拟合,不同亚硝酸盐添加量(0、50、100、150mg.kg-1)对照组的拟合性较好(R2>0.75),应用B嚙lehr偄dek或Ratkowsky平方根经验模型拟合亚硝酸盐抑菌模型,拟合性良好(R2>0.65),经过验证并通过数学检验参数平方根误差(RMSE)、准确性因子(Af)、偏差因子(Bf)和标准预测误(SEP)对模型进行数学检验,表明平方根模型适用性、可靠性和拟合性在可接受范围内,可以在肉类工业中推广使用。

【Abstract】 In order to study the feasibility of square-root-type model on bacteriostasis prediction of nitrite,the growth curves of inoculated bacteria strains,Escherichia coli,Staphylococcus aureus and Clostridium sporogenes,were fitted by Baranyi function.It indicated that Banranyi function was the appropriate one to estimate two growth parameters(growth rate,GR;lag-time,LT) of different batches of sodium nitrite(0,50,100,150mg·kg-1).Furthermore,Bělehrádek or Ratkowsky function of root-square was applied for the fitting bacteria inhibition from nitrite in cooked sausage.Then,goodness for fitting of the established model was evaluated by validation of market samples and evaluation of mathematical parameters.It were found that the standard error of prediction(SEP),root-mean-squares error(RMSE),bias factor(Bf) and accuracy factor(Af) were within acceptable range,and square-root-type model provided a useful and accurate method for predicting and controlling the inhibition of nitrite on spoilage and pathogen microorganisms in meat industry.
