蛋白-多糖共价复合物界面流变特性的研究
Study on interfacial rheological property of soy protein-polysaccharide conjugate
【摘要】 采用自动形滴张力测量法对蛋白-多糖复合物的界面流变特性进行了研究。结果表明,SPI-KC复合物在油-水界面上形成的界面膜为粘弹性膜,SPI-KC共价复合后界面膜的膨胀弹性模量明显增大,对SPI与三种不同类型的多糖(KC、KG、AG)的共价复合物进行对比研究,发现产物的膨胀弹性模量均表现出与它们的乳浊液稳定性相一致的关系。
【Abstract】 Dynamic interfacial rheological properties of SPI-polysaccharide conjugate were studied by using an automatic shape drop tensiometry.The investigation indicated the interfacial film of SPI-KC conjugate at the oil-water interface was viscoelastic.The dilational elastic modulus of SPI-KC conjugate was larger than those of SPI-KC mixture.Studied on 3 kinds of SPI-polysaccharide conjugates(SPI-KC,SPI-KG,SPI-AG) found surface dilational modulus of these products consisted with their emulsion stability.
