黄粉虫幼虫及蛹中营养成分分析
Analysis on the nutrient composition in the larva and pupa of Tenebrio molitor(L.)
【摘要】 分析了黄粉虫幼虫粉及蛹粉中的营养成分。研究结果表明,幼虫粉中的水分、脂肪、蛋白质和灰分的含量分别为10.0%、30.8%、42.6%和2.9%;这四种成分在蛹粉中的含量分别为6.9%、33.1%、48.3%和2.4%。幼虫粉和蛹粉中不饱和脂肪酸含量较高,它们中不饱和脂肪酸与饱和脂肪酸的比值分别为3.21和2.92。幼虫粉和蛹粉均含有17种氨基酸(色氨酸未测),必需氨基酸分别占氨基酸总量的40.2%和44.1%;它们中必需氨基酸与非必需氨基酸含量的比值分别67.2%和78.9%;按照氨基酸评分(Amino Acid Score,AAS)和化学评分(Chemical Score,CS)标准,含硫氨基酸(蛋氨酸+胱氨酸)及苏氨酸为幼虫粉与蛹粉的第一、第二限制性氨基酸;必需氨基酸指数分别为73.8和86.3。幼虫粉中矿物元素Zn、Cu、Fe、Ca、Mg和P的含量分别为10.3、2.3、7.1、51.0、126.3和684.2mg/100g干样;这六种元素在蛹粉含量中则分别为9.9、1.8、8.7、97.5、122.0和570.2mg/100g干样。
【Abstract】 The primary nutrient composition in the powder of larva and pupa of Tenebrio molitor(L.).was studied in this paper.The results showed that the contents of moisture,fat,protein and ash in the powder of larva were 10.0%,30.8%,42.6% and 2.9%,respectively.However,the contents of them in the powder of pupa were 6.9%,33.1%,48.3 and 2.4%,respectively.The contents of unsaturated fatty acids in both larva and pupa were high,and the ratio of unsaturated fatty acids to saturated fatty acids in them were 3.21 and 2.92,respectively.They all comprised 17 kinds amino acids(tryptophon not measured).The ratio of the total content of the essential amino acids to that of total amino acids were 40.2% and 44.1%,respectively.Whereas,the ratio of the total content of the essential amino acids to that of unessential amino acids were 67.2% and 78.9%.According to the amino acid score(AAS)and chemical score(CS),the first limiting amino acid of larva and pupa of Tenebrio molitor(L.)is Met and Cys,the second limiting amino acid is Thr.Besides,the essential amino acid index(EAAI)of larva and pupa were 73.8 and 86.3.The analysis of mineral elements indicated the contents of Zn,Cu,Fe,Ca,Mg and P in the powder of larva were 10.3,2.3,7.1,51.0,126.3 and 684.2mg/100g dried samples.Whereas,they were 9.9,1.8,8.7,97.5,122.0 and 570.2mg/100g dried samples respectively in the powder of pupa.
