间歇升温防止冷藏桃果实糠化的研究

【摘要】 桃果实长期在低温下贮藏,易发生冷害,出现果肉糠化的现象。本研究以辽宁特产柏山蜜桃为原料,利用间歇升温的方式进行贮藏,系统研究了贮藏过程中桃果实的生理生化变化。实验结果表明,适时间歇升温,阻止了冷藏桃果实中PE活性的持续增加,保持了PG活性,维持了果胶类胞壁物质正常代谢的功能,果肉未出现糠化现象,贮后果实多汁。

【Abstract】 Chilling injure including woolliness would appear in peach fruits during low-temperature storage.The special local fruit-Baishan honey peach was used as material in our study.The fruits with intermittent warming were stored and the physiological variation of peach fruits was studied during storage.The experimentation result showed suitable intermittent warming would prevent PE enzyme of the cold storage peach fruits from increasing,keep the activities of PG enzyme and maintain the metabolize function of pectin cell wall material.The woollines of peach fruits did not appear.The peach fruits had many juice.
