食品冻结过程温度场及冻结时间的数值模拟与实验研究
Numerical simulation and study on temperature field and freezing time in food-frozen processing
【摘要】 计算流体力学(CFD)在食品传热传质及流体流动相关领域内广泛应用,并取得了很好的效果。本文以冰箱冷冻室内的土豆为研究对象,建立三维非稳态数值计算模型,选用冻结模式,并引入食品热物性多项式对其进行传热分析与计算。实验验证表明模型与实际吻合较好。模拟研究揭示了食品在冰箱中冻结各阶段的温度分布状态、冻结状况等,并较准确地预测了食品的冻结时间。
【Abstract】 Computational fluid dynamics(CFD)has been applied in heat and mass transfer of food processing and many fields relating to fluid flow more frequently.It was testified that CFD was useful in these fields.In this paper,a three-dimension unsteady mathematics model was established and the polynomial model for predicting the thermal properties of food was introduced to simulate the heat transfer for potatoes in a freezer.Good agreement between the simulation results and the experiments were approved.By simulation,temperature distribution and frozen condition of potatoes were reflected in the process of frozen,and the simulated freezing time was certified by the experimental datum.
