发酵法生产番茄红素的研究进展
Advance on the Production of Lycopene by Microbial Fermentation
【摘要】 番茄红素是由11个共轭双键及2个非共轭碳碳双键构成的高度不饱和直链型烃类化合物,具有预防癌症、防治心血管疾病、缓解骨质疏松症和提高免疫等重要的生理功能。番茄红素的生产方法主要有提取法、化学合成法和微生物发酵法。由于番茄红素含量低,提取法无法满足市场需求;化学合成法存在收率低、产物不稳定以及合成成本高等缺点;发酵法被认为是生产番茄红素最有潜力的方法,文中对发酵法生产番茄红素的关键技术环节(如菌种选育、发酵工艺优化和分离纯化)的研究进展进行了阐述。
【Abstract】 Constituted by 11 conjugated and 2 unconjugated double bonds,lycopene is a highly unsaturated open straight chain hydrocarbon.Lycopene that has many important physiologic functions,such as prevent cancer,cardiovascular diseases,osteoporosis,and strengthen immunity.The production method of lycopene includes plant extraction,chemical synthesis and microbial fermentation.Plant extraction does not satisfy the market need because of the low content in the plants.Chemical synthesis comes with many disadvantages like the low yield,instability of product quality and high cost.This paper briefly reviewed the development of key fermentation technologies,such as the breeding of producing strain,fermentation processes optimization,separation and purification in down-stream process.
