牦牛酥油脂肪酸组成及其对小鼠血脂的影响
Fatty acid composition of yak coarse butter and its effects on mouse blood lipid profile
【摘要】 采用气相色谱-质谱法在牦牛酥油中检测到14种主要的脂肪酸,总不饱和脂肪酸比例为31.0%,共轭亚油酸为(0.437±0.044)mg/g。饲喂牦牛酥油能显著增加小鼠的体重和腹脂的质量。饲料中添加10%的酥油能显著提高小鼠血液三酰甘油、总胆固醇和脂蛋白脂酶水平,降低高密度脂蛋白胆固醇浓度,但变化幅度在总体上低于添加10%的猪油。本研究表明,牦牛酥油脂肪酸组成与普通牛乳有一定差异;与猪油相比,牦牛酥油对小鼠血脂的负面影响相对较小。
【Abstract】 Fourteen major fatty acids were detected in yak coarse butter using GC-MS.The total unsaturated fatty acid accounts for 31.0% of the total fatty acids.The concentration of conjugated linoleic acid in yak coarse butter is(0.437±0.044) mg/g.Supplement of 10% yak coarse butter in the diet significantly increased the experimental mouse bodyweight,abdominal fat deposition,blood TG,TC contents and LPL activ-ity,reduced HDL level.However,the changes caused by yak coarse butter were in general lower than those caused by the supplement of 10% lard.Results from this research have indicated that the fatty acid composition of yak coarse butter is different with bovine milk,and yak coarse butter has less adverse effects on mouse blood lipid profile compared with lard.
