【摘要】 为了筛选出益生菌酸马奶片的最佳工艺配方,通过正交实验对益生菌酸马奶片口味和成型工艺进行了最优化。结果表明,最佳工艺配方为酸马奶粉50%,奶粉15%,蛋白糖1%(均为质量分数,下同),并以质量分数3%的CMC-Na为粘合剂、质量分数为3%的硬脂酸镁为润滑剂、20目筛制颗粒。研制的益生菌酸马奶片工艺可行,且符合各项质量检查。更多还原

【Abstract】 To obtain the optimized formula of probiotics koumiss tablets .By using orthogonal design, which took the hardness as index, the formula of probiotics koumiss tablets has been optimized.The optimized formula is 50% koumiss powder, 15% Skim milk powder, 1%Aspartame(APM), 3% Carboxymethylcellulose Sodium(CMC-Na) as bond, 3% Magnesium Stearate as lubricant,sifter of 20 size to make granule.The prepared probiotic koumiss tablet is reasonable in formula, feasible in technology and it meets the quality standards.更多还原
