芦笋贮藏保鲜和加工与芦笋的产业化发展前景

【摘要】 本文在查阅大量文献资料和实验工作的基础上,概述了芦笋的食用价值,包括营养价值和保健功能,介绍了芦笋常见的冷藏、人工气调贮藏和自发气调贮藏3种方法,简要说明了加工产品的种类和加工线索,指出了芦笋贮藏、加工和保健作用对产业化发展的促进作用。最后提出了芦笋贮藏加工中应注意的问题。

【Abstract】 The edible values of Asparagus officnalis were summarized on the basis of numerous literatures and experiments,including nutrient value and health care function.Three methods were introduced to store Asparagus officnalis,respectively,common refrigeration,artificial and spontaneous storage through atmosphere adjustment.The sorts and procedures were illustrated briefly,and the accelerate effects of storage,process and health care functions of Asparagus officnalis on the industrial development were preformed.Finally,suggestions were proposed during storage and process of Asparagus officnalis.
