黔产棕灰口蘑营养成分分析
Nutritive value components analysis of Tricholoma terreum grown in Guizhou
【摘要】 棕灰口蘑(Tricholoma terreum)是一种夏秋季在松林或混交林中地上群生或散生野生食用菌。通过不同方法分析测定其营养成分,结果表明,该菌含有合理的营养成分:灰分(Ash)8.2%,蛋白质(Prote in)18.0%,脂肪(Fat)8.8%,粗纤维(Crude fibre)19.8%,碳水化合物(Carbohydrate)60.0%,总糖(common sugar)2.4%,在每100 g干重中,含铁为730mg/kg,锌139 mg/kg,铜19.2 mg/kg,锰15.7 mg/kg,此外,还测定了蛋白质中的氨基酸组成。
【Abstract】 The nutritional compositions in the fruit body of Tricholoma terreum growing in pinetum,mingled forest or roominess in summer or autumn in Papua New Guinea were detected by using different methods.The results showed that Tricholoma terreum contained rational nutrients:ash 8.2%,proteins 18.0%,fats 8.8%,cellulose 19.8%,carbonhydrate 60.0%,and common sugar 2.4%.There are 730mg Fe,139mg Zn,19.2mg Cu,15.7mg Mn in every100g dry weight.The amino acid compositions in the proteins were also detected.
