【Abstract】 Chitosan is a polysaccharide derived by deacetylation of chitin. Chitosan is a kind of alkalescence amylose that existed in the nature exclusively,no poisonous. It comes from the shell of shrimp and crab. In our country,the resources.of chitosan is abundant,the yield is high, and the price is low. Low-molecular weight chitosan can be obtained from chitosan by appropriate way. People are paying more and more attention to low-molecular weight chitosan because of its special physicochemical properties and physiological functions.
