西藏雪莲中乳酸菌的分离鉴定及抑菌活性的研究

【摘要】 从西藏雪莲发酵乳液中分离得到的细菌,经过生理生化鉴定确定为短乳杆菌。以MRS为培养基,探讨短乳杆菌发酵液及其上清液对大肠杆菌、金黄色葡萄球菌、沙门氏菌、腊样芽孢杆菌和单核增生李斯特菌五株指示菌的抑菌活性,其抑菌圈直径分别17.8~23.3mm和13.0~15.6mm;发酵液中抑菌物质具有一定的热稳定性,加热处理后,其抑菌效果有所降低;经不同pH处理后,短乳杆菌分泌的抑菌物质的抑菌活性随pH值的升高呈下降趋势。

【Abstract】 Through isolation,purification,physiological and biochemical identification of microorganism in fermented,a strain was identified as Lactobacillus brevis.And the bacteriostatic actions of Lactobacillus brevis fermented Saussurea involucrate against Escherichia coli,Staphylococcus aureus,Salmonella,Bacillus cereus and Listeria were examined with MRS medium.The bacteriostatic diameters of the fermentation broth and culture supernatant were 17.8~23.3 mm and 13.0~15.6 mm,respectively.The inhibition substances showed high thermo-stability,as only sight decrease of the bacteriostatic effect was found by a heat-treatment.And its bacteriostatic effect was reduced with pH increasing.
