核桃仁中多酚类物质的液相/电喷雾质谱分析

【摘要】 利用HPLC-ESI-MSn方法对核桃(Juglans regiaL.)仁中多酚类物质组成进行了分析,发现的多酚类物质有鞣花酰基葡萄糖4种异构体、橡椀?咸烟?种异构体、二鞣花酰基葡萄糖2种异构体、二没食子酰基葡萄糖2种异构体、鞣花酰基和橡椀?咸烟?种异构体。结果表明,采用HPLC-ESI-MSn方法可以对核桃仁中多酚类物质进行有效的分析。

【Abstract】 High performance liquid chromatography coupled with electrospray ionization mass spectrometry was used to study the phenolics profile of Persian walnut(Juglans regia L.) seeds.Four isomers of HHDP(Hexahydroxydiphenoyl)-glucopyranose,2 isomers of valoneoyl-glucopyranose,2 isomers of di-HHDP-glucopyranose,3 isomers of galloy-valoneoyl-glucopyranose and 2 isomers of digalloy-glucopyranose were found to be present in Persian walnut seeds with a number of,as yet,unknown compounds.The results illustrate that the MSn was a particularly powerful tool for the analysis of phenolic compounds in Persian walnut seeds.
