大豆的功能性及保健食品开发
Soybean’s function and healthy food development
【摘要】 大豆中含有多种活性成分,具有非常高的营养价值及保健功能,其功能产品的开发前景广阔。我国以生产优质大豆而闻名中外,倘若将大豆中的有效成分充分利用在食品中,将有非常可观的社会和经济效益。
【Abstract】 Soybean has high nutritional value and health care function because of its active compositions inside.Development of soybean functional food has a wide foreground.China was famous for her high-quality soybean in the world,so there will be great social and economic benefit if functional matters in soybean was maken full use of in food industry.
