萃取-蒸馏法生产高酸度醋的研究
Study on the Production of High Sour Vinegar by Extraction-Distillation
【摘要】 探索采用萃取-蒸馏生产高酸度醋的可行性。结果表明,萃取剂采用乙酸乙酯;萃取的最佳条件为时间20min,溶剂比1.0,乙酸乙酯萃取醋中的醋酸时分配系数为0.75左右。
【Abstract】 The extractant was chosen in this study firstly.Then,the optimal condition of extration was established.A new method,extraction-distillation,was attempted to be used during the process of high sour vinegar.The results indicated that acetic ether was optimum extractant,extraction time 20 minutes,proportion of solvent1.0,distribution coefficient 0.75.
