【摘要】 以菊芋粉为材料,嗜热链球菌和保加利亚乳杆菌为实验菌株,研究菊芋在牛乳中对2菌株生长的影响,结果表明,在牛乳中加入菊芋粉,凝乳时间均有所缩短,菊芋粉对保加利亚乳杆菌和嗜热链球菌的生长无抑制作用,0.6%菊芋粉添加量对保加利亚乳杆菌生长有显著促进作用。更多还原

【Abstract】 In this paper, Jerusalem artichoke (JA) powder was used as material and Lactobacillus bulgaricus and Streptococcus thermophilu were used as experimental strains. The effects of Jerusalem artichoke on the growth of L. bulgaricus and S. thermophilu were studied. The results showed, adding Jerusalem artichoke to milk could shorten the time of milk-solidifying, Jerusalem artichoke couldn’t restrain the growth of S. thermophilu and L. bulgaricus, adding Jerusalem artichoke (0.6%) could significantly promote the growth of L. bulgaricus.更多还原
