真空包装腌制萝卜干中致病菌的抑制
Prevention of the pathogenic microorganism from pickle radish in vacuum package
【摘要】 文章应用苯甲酸钠、山梨酸钾、双乙酸钠、脱氢醋酸钠、Vc、六偏磷酸钾、尼泊金丁酯和霉克等八种防腐剂对该四种微生物进行抑制试验。从中筛选出抑菌效果较好的防腐剂。然后进行复配抑菌试验。另外试验了pH、盐度对该四种菌的抑制作用。结果表明,85℃下浸泡20 min明显减少了克柔念珠菌和蜡样芽孢杆菌,其受热杀伤后,在pH4以上,其能生长的菌比较少。但是对枯草芽孢杆菌和金黄葡萄球菌杀菌不够理想。四种菌种通过85℃下浸泡20 min处理后,调节盐度到9°后可以达到全部抑制。对于单一防腐剂可以调节pH为4.5左右增强抑菌能力,其中以苯甲酸钠、双乙酸钠、脱氲醋酸钠、山梨酸钾的抑菌效果最好。复合防腐剂中在未出现腐败变质的情况下,以复配防腐剂0.4‰苯甲酸钠+1‰双乙酸钠的添加量为最小。对于成品,苯甲酸钠(0.4‰)+双乙酸钠(1‰)、热杀菌温度85℃、杀菌时间20 min,pH5.0左右,盐度为7°时可达到较好的抑菌效果。
【Abstract】 Single preservatives including Sodium Benzoate,Potassium Sorbate,So dium De- hydroacetic,Vc,Potassium Hexametaphosphate,Parabens,Natamycin were usec for con- trolling the microbes growth.The combine preservatives treatments for control the microbes were studied after the single preservatives experiment.The effect of pH and salinity on the microbes were studied at the same time.The results showed that above pH4 Candida krusei and Bacillus subtili can be controlled and four microbes can be controlled completely by 9°when they are treated at 85℃for 20 min.To single preservatives,Microbes can be con- trolled very well by Sodium benzoate,Dehydroacetic acid,Sodium Dehydroacetic and Potas- sium Sorbate when pH is 4.5.The content of adding 0.4%.Sodium benzoate +1%.De- hydroacetic acid is the least when modification of corruption don’t happen.To the product,the optimum treatment was that adding 0.4%.Sodium benzoate +1%.Dehydroaeetic acid,pH and salinity being adjusted as 5.0 and 7°,then being treated at 85℃for 20 min.
