豆腐皮废甜浆中生物活性物质的检测

【摘要】 为进一步开发和再利用甜浆资源,采用高效液相色谱(HPLC)及其它标准分析方法对豆腐皮生产过程中产生的废浆——"甜浆"的组成进行了检测。结果表明,甜浆中除了含有蛋白和脂肪外,还含有大量的低聚糖、黄酮和皂苷等生物活性成分。甜浆中可溶性蛋白质含量16.92%,大豆低聚糖29.07%,大豆皂苷0.06%,总黄酮为0.657%(干重)。

【Abstract】 To develop and reuse the sweet slurry,the composition of sweet slurry,a by-product from soybean sheet manufacture was analyzed with the method of High Performance Liquid Chromatograph method(HPLC)and other standard analytical methods in this paper.The results showed that besides a certain amount of protein and fat,there were large quantities of bio-active substances such as oligosaccharides,flavones,saponin and etc.Soluble protein,oligosaccharides,flavones,saponin represented 16.92%,29.07%,0.06%,0.657% of the sweet slurry(on dry basis).Our results indicates that it is feasible to develop the resource of sweet slurry and recover bio-active substances especially the soybean oligosaccharides from it.
