金属离子对洋葱中风味前体物质定向生成甲基丙基二硫化物的影响
Effect of metal ion on the directional transformation of flavour precursor to methyl propyl disulfide in fresh onion
【摘要】 在洋葱中,蒜氨酸酶水解风味前体物质生成的甲基丙基二硫化物(MPD)具有多种生物活性。本文研究了Mn2+、Ca2+、EDTA-Na2、Mg2+、Fe2+、Cu2+、Zn2+、K+等八种不同的金属离子对MPD生成量的影响。实验结果表明:Mn2+、Mg2+、Fe2+、Zn2+能够增强蒜氨酸酶的活性,并且能够促进MPD的生成,而Ca2+、EDTA-Na2、Cu2+、K+则在不同程度上阻碍MPD的生成。其中Mn2+的促进作用较为显著,Mn2+浓度为10mmol/L时促进MPD生成的作用最佳。
【Abstract】 In the onion,methyl propyl disulfide(MPD) produced by the reaction of Alliinase with precursor substances have many biological activity.In this paper,the effect of Mn2+,Ca2+,EDTA-Na2,Mg2+,Fe2+,Cu2+,Zn2+,K+ on the formation of MPD were studied.The results showed that Mn2+,Mg2+,Fe2+,Zn2+ had activation effect on Alliinase,and they also could promote the formation of MPD,while Ca2+,EDTA-Na2,Cu2+,K+ had the opposite effect.Mn2+ had the most acceleration effect of the Alliinase catalyzed reaction and the formation of MPD,the optimal concentration of Mn2+ was 10mmol/L.
