【Abstract】 The concentration of diacetyl and acetaldehyde in fermented milk were determined by spectro- photometry and titration respectively after treated by trichloracetic acid(TCA).Using this method,a re- producible and stable result can be obtained with easy—operating equipment.This finding may be contribu- tive to the ferment milk research and development.更多还原
