应用Nafion修饰电极测定油脂中过氧化物的研究

【摘要】 目的探讨检测油脂中过氧化物的新方法。方法基于食用油的介电性质,制备了Nafion修饰玻碳电极,采用循环伏安法测定食用油中的过氧化物。结果在优化条件下,得到过氧化物浓度在3×10-6 ̄3×10-4 mol/L范围内,其浓度与峰电流线性相关。结论得到了用Nafion修饰电极检测油脂过氧化物的新方法。

【Abstract】 Objective To explore a new method for the determination of peroxide in edible oil.Methods Basing on the dielectric nature of edible oil,a nafion-modified glassy carbon electrode was designed for the determination of peroxide in edible oil by cyclic voltammetry.Results Under the optimized condition,the linear relation between peak current and concentration of peroxide from 3×10-6 to 3×10-4 mol/L was gained.Conclusion The new method can be obtained for the determination of peroxide in edible oil by using a nafion-modified glassy carbon electrode.
