豫南小鲵肌肉生化成分分析
Analysis on Biological Composition of Muscle in Hynobius yunanicus
【摘要】 用生化分析方法测定豫南小鲵肌肉生化成分,结果表明:雌性肌肉含蛋白质15.39%,雄性含15.72%;总糖雌性1.84%,雄性1.73%;脂肪雌性0.72%,雄性0.56%。18种氨基酸总量13.43%(鲜重),其中8种必需氨基酸5.27%,必需氨基酸指数(EAAI)80.94。11类脂肪酸中,不饱和脂肪酸含量远大于饱和脂肪酸,分别为77.53%和22.47%。
【Abstract】 Measurements were made for analysis of the nutritive composition of muscle in Hynobius yunanicus which is endemic species of Caudata living in the Shangcheng County,Henan Province.The biochemical composition(%,wet) were that:the moisture of muscle was 80.17%,protein 15.39%,fat 0.72%,saccharide 1.84% of female,and the moisture of muscle was 80.10%,protein 15.72%,fat 0.56%,saccharide 1.73% of male.The total content of 18 kinds amino acids was 13.43%(wet);the content of 8 kinds essential amino acids was 5.27%.By nutrition evaluation for the amino acids in muscle to human needs,the content of 4 kinds delicious amino acids was 35.14% in total amino acids.According to the amino acids score(AAS) and chemical score(CS),the first limited amino acid was valine.The essential amino acids index(EAAI) was 80.94.The result shows that in the 11 kinds of fatty acids(FA),the percentage of the unsaturated fatty acids is significantly different to the saturated fatty acids,77.53% and 22.47% respectively.
