植物源天然食用色素的开发利用研究
The Exploitation and Utilization of Plant-derived Natural Edible Pigments
【摘要】 开发和利用植物源天然食用色素是世界食用色素的发展趋势。综述植物源天然食用色素的发展概况和分类,详细介绍几种常用提取和分离纯化技术的基本原理、适用范围及优缺点,并展望了植物源天然食用色素的开发利用前景。
【Abstract】 The exploitation and utilization of plant-derived edible pigments is the development trend in the world.A series of researches on natural edible pigments including some principles of extraction and purification technologies,application scope as well as advantages and disadvantages are reviewed.Moreover,the prospect of exploitation and utilization is expected also.
