【Abstract】 The studies were the applied experiment of compound modified maize starch in course of drink,soy milk,jam and flour products. The result showed that the compound modified maize starch had obvious applied purpose on inhibited,emulsification,resistant-gelgelatin,edible oil-saving,film strength.
