湿热处理玉米淀粉对酶敏感性研究

【摘要】 该研究以玉米淀粉为原料,用湿热处理方法对淀粉进行改性。以改性后其对淀粉酶敏感性为指标,通过正交试验得到最佳工艺参数为:淀粉水分含量32%(W/W),湿热处理温度120℃,作用时间5.5h,此处理条件对酶敏感性提高8.13%。

【Abstract】 Heat-moisture treatment for corn starch was used in this experiment.Corn starches were hydrolyzed by Amylase,then percentage of enzymetic susceptibility of corn starches was measured in order to get the best modified corn starch.With orthogonal design showed that under the conditions of humidity 32%,temperature 120~C,and time 5 h.On these conditions the enzymetic susceptibility was improved by 8.13%.
