普鲁兰酶对柠檬酸发酵残糖降解效果的研究
Study on the degradation of citric acid fermentation residual sugar by pullulanase
【摘要】 在柠檬酸发酵残糖成分分析的基础上,研究了普鲁兰酶降解发酵残糖的最适条件和降解效果。研究结果表明,普鲁兰酶作用的最适条件为:t=28min,T=58℃,pH 4.8,酶用量0.4mL;在最适条件下,还原糖含量可提高30.7%.
【Abstract】 In this paper,citric acid fermentation residual sugar component analysis,based on a study of degradation pullulanase residual sugar fermentation the optimal conditions and degradation of performance.The results show that the pullulanase of the optimal conditions for the role: t = 28min,T = 58 ℃,pH 4.8,Pullulanase 0.4 mL;in this experiment from optimal conditions,reducing sugar content can increase of 30.7 percent.
