水稻种子贮藏蛋白合成的分子生物学研究进展

【摘要】 水稻种子贮藏蛋白属优质植物蛋白,是以稻米为主食的人们的蛋白的主要来源,有关其组成结构以及生物合成途径已逐渐为研究者所了解,这为改良稻米营养品质提供了重要依据。本文从生化结构、编码基因及其表达调控机理等方面较为详尽地综述了水稻种子贮藏蛋白合成的分子生物学研究进展,并对改良水稻贮藏蛋白的营养品质提出了一些设想。

【Abstract】 The rice seed storage proteins are regarded as high-quality proteins in plant which would be the main source of proteins for people who bear rice as staple food. Research progresses on the compositions, structures and biosynthetic pathways have been made and gradually accepted so far, which would be very useful and helpful to provide the foundations for improving the nutrient value of rice grain. In this paper, we reviewed the biosynthesis of rice seed storage proteins in molecular biological levels, including their biochemistry, structure, and coding genes’ expression and regulation, and also proposed several strategies to further improve the rice protein quality.
