干热对脱脂豆粕中脂肪氧合酶活力影响的研究

【摘要】 通过干热方式对脱脂豆粕中脂肪氧合酶进行处理,着重比较分析加热温度、时间和豆粕水分含量对豆粕中残余酶活的影响。加热时间和豆粕水分含量对Lox-1和Lox-2灭活严重,其中Lox-1更显著;Lox-3虽然活力最小,但是对干热处理一定的耐受力。

【Abstract】 Lipoxygenases in defatted soybean flour were dealed by dry heating treatment. The effect of heating temperature, heating time and water content in flour on enzyme activity were compared and analyzed, mostly. The inactivity of heating time and water content in flour on Lox-1 and Lox-2 was severely. But the effect on the Lox-1 was greater than that on the Lox-2. The activity of isozyme Lox-3 was the least in them, but it had more resistance to dry heating treatment.
