烹调油烟中反,反-2,4-癸二烯醛浓度与油温的关系
Relationship between Concentration of t, t-2, 4-DDE in Cooking Oil Fume and Cooking Temperature
【摘要】 目的探讨油温与烹调油烟中反,反-2,4-癸二烯醛(t,t-2,4-DDE)浓度的关系。方法组建食用油加热温度控制装置,通过制作的活性炭管采集气态油烟污染物,在60、90、120、150、180、210、240、270℃油温分别采集6个样品,以气相色谱-氢火焰检测器测定其中t,t-2,4-DDE的含量。结果120℃及以下组未检出t,t-2,4-DDE;与210、240、270℃组分别比较,150、180℃组浓度较低,差异均有统计学意义(P<0.01)。分别与240、270℃组比较,210℃组t,t-2,4-DDE浓度较低,差异均有统计学意义(P<0.05)。结论在150~240℃油温内,烹调油烟中t,t-2,4-DDE浓度随温度升高而增高。
【Abstract】 Objective To explore the relationship between the concentration of t, t-2, 4-DDE in cooking oil fume(COF) and the cooking temperature. Methods The temperature control system of oil heating was developed, the activated carbon was used to collect gaseous pollutants. Six samples were prepared at 60, 90, 120, 150, 180, 210, 240 and 270 ℃. The concentration of t, t-2, 4-DDE in COF was analyzed by GC-FID. Results The concentration of t, t-2, 4-DDE in COF was below the detection limit when the oil temperature was not higher than 120 ℃. Among the 150 ℃ and 270 ℃ groups, the concentration of t, t-2, 4-DDE showed a significant increase. Conclusion The concentration of t, t-2, 4-DDE in COF may obviously increase as the cooking temperature is not lower than 150℃.
