真海鞘营养成分的分析与评价

【摘要】 对真海鞘Halocynthia roretzi可食部的基本成分以及氨基酸、矿物元素和脂肪酸含量进行了分析。结果表明:真海鞘可食部蛋白质、粗脂肪、灰分、总糖含量(均为质量分数,下同)分别为39.60%、6.53%、25.79%、9.19%;氨基酸含量为29.50%,必需氨基酸占氨基酸总量的51.40%,特别是呈味氨基酸占氨基酸总量的36.37%,各必需氨基酸的氨基酸平均得分为90.0±15.7;真海鞘可食部含有丰富的矿物元素Na、Mg、Ca、P、Fe、Zn、Cu、Co、V、Mn,特别是Zn的含量(730.7 mg/kg)远高于其它海洋动物;真海鞘可食部富含必需不饱和脂肪酸,可以作为n-3系列不饱和脂肪酸的来源。

【Abstract】 The nutritional composition of the edible parts of ascidian Halocynthia roretzi including crude protein,crude fat,carbohydrate,ash,amino acids,mineral elements as well as fatty acids was analyzed.Results showed that there were 39.60% of crude protein,6.53% crude fat,25.79% ash and 9.19%carbohydrate in the edible parts of the ascidian.The animal had 29.50% of amino acids,in which the essential amino acids comprised 51.40% of the total amino acids,especially 36.37% of the delicious amino acids in the total amino acids with the average score of essential amino acids of 90.0 ±15.7.The results also indicated that there was rich mineral elements such as Na,Mg,Ca,P,Fe,Zn,Cu,Co,V,and Mn in the edible part of the animal,especially Zn.Halocynthia roretzi as source of n-3 series polyunsaturated fatty acids was rich in unsaturated fatty acids.
