浙江省主要蔬菜的硝酸盐积累差异及其影响因子的研究

【摘要】 对浙江省8个蔬菜主要产地17种蔬菜硝酸盐含量抽检的结果表明:蔬菜产品的硝酸盐含量基本能符合食用要求。从蔬菜种类来看,叶菜类的合格率普遍较低,2003年为45.5%,2004年为54.2%。青菜等绿叶菜是硝酸盐高积累型蔬菜,而果菜类和根茎类蔬菜硝酸盐含量明显低于叶菜类。通过分析蔬菜中的硝酸盐积累与土壤、施肥的关系,表明高积累硝酸盐蔬菜易受土壤全氮、后期施氮肥的影响。建议采取选择低硝酸盐积累蔬菜种类、控制后期施氮量等农艺措施来降低硝酸盐在蔬菜体内积累。

【Abstract】 The results of monitoring nitrate concentrations in 17 vegetables in 8 cities in Zhejiang showed that the nitrate concentrations in vegetable samples reaching the national standards in 2003 and 2004 were 45.5% and 54.2%,respectively.Green leaf vegetable was one containing high nitrate.Leaf vegetables contained much higher nitrate than that root and stem vegetables.The accumulation of nitrate in vegetables was closely related to soil total N and N rate applied in late stage(before harvesting).It was suggested that proper selection of vegetable species and controlling N supply in late stage could effectively control nitrate accumulation in vegetables.
