大豆蛋白酶解液脱色工艺的优化
Optimum conditions of decolouring technology of soybean protease hydrolysate
【摘要】 采用正交试验法,用粉末活性炭对大豆蛋白酶解液进行脱色处理,比较粉末活性炭用量、pH、脱色温度和吸附时间等因素对脱色结果的影响。结果表明:粉末活性炭用量2%,pH3,脱色温度50℃,吸附时间3h,大豆蛋白酶解液脱色效果明显,肽损失率为18.88%。
【Abstract】 <Abstrcat>This experiment studied the effects of activated carbon,pH,temperatures,and adsorption times on decolourization of soybean protease hydrolysate.The result showed that optimum discolouration effect was obtained from the following conditions:quantity of activated carbon of 2%,solution pH value of 3.0, temperature of 50℃, and adsorption time of 3 h. The loss rate of soybean peptide was 18.88%.
