膨化薯干酒精浓醪发酵

【摘要】 在我国南方薯类原料是最广泛的用于酒精发酵的淀粉质原料.报道了薯干原料经挤压膨化后作为补料进行酒精浓醪发酵的新工艺.经250mL和3L三角瓶试验,得到初始料水比为1∶4,预培养10h后补料,补加膨化料量为初始投料量的60%的较佳工艺.30L发酵罐进行放大实验结果表明,补料后发酵48h发酵成熟醪中酒精体积分数达到138mL.L-1,淀粉利用率可达94.78%,比传统工艺有了大幅度提高.如果能解决工程放大中可能存在的问题,该工艺将有望在工业化生产中得到应用.

【Abstract】 Potatoes represent the most widely used starchy raw material in ethanol production in south China. A new process of ethanol very high gravity (VHG) fermentation using extruded sweet potatoes was reported. A range of experiments were carried out in 250 mL and 3 L flasks, and a bench fermentor. In this process, after 10 h of precultivation with an initial liquor grist ratio of 4.0 l kg-1, the appropriate fed amount of extruded potatoes that was 60% of initial loading potatoes should be admixed with fermentation mash. In scale-up test, conversion efficiency of 94% with the final ethanol concentration of 138 mLL-1 was achieved after 48 h fermentation in a fermentor with 30 L working volume, and both parameters are much better than conventional technology. If potential problems emerged in pilot or industrial scale could be solved, this new process can be applied in commercial production of ethanol.
