芙蓉李低温贮藏过程保护酶活性变化的研究
Studies on the Changes of Protective Enzyme Activities in Furong Plum during Cold Storage
【摘要】 为探讨李果低温贮藏效果与果实保护酶活性的关系,以永泰芙蓉李为材料,采用不同温度、不同包装的处理,对李果在贮藏期间保护酶变化的规律以及与之相关的生理生化指标进行研究。试验结果表明:2~5℃的低温可以使保护酶系统活性总体保持在较低水平,推迟保护酶活性高峰的出现,降低MDA等有害物质的积累,有效地延缓了采后果实的成熟与衰老,但不同厚度的PE膜处理对保护酶系统活性的影响不显著;保护酶必须协调一致才能起到很好的“保护”作用。保护酶SOD活性高低可作为果实抗衰老能力的指标,而且该酶活性下降的时间或MDA高峰的出现可作为判断果实成熟衰老的依据。
【Abstract】 The activities of protective enzymes ( POD, CAT, SOD) in Furong plum ( Prunus salicina Lindl. cv. Furong) and its physiological and biochemical indexes during cold storage were explored. The plums were packed with PE film with various thickness and then stored at different temperature. The results showed that the activities of these en- zymes remained at lower levels at lower temperatures (2~5℃) , and the presences of the peak of these enzymes were de- layed, the accumulating speed of harmful substances ( MDA) was reduced. However, the effect of PE film thickness on enzymes activities was not obvious. Only when all the enzymes were put in line, they could delay the progress of fruits ripening and senescence. The SOD activity can act as the fruit anti- decrepitude index. The time when the enzymes activ- ities begin to decline or the presence of the peak of MDA can be used as the indication of the ripeness and senescence degree of Furong plum fruits.
